Foolproof No-bake Berries Cheesecake

Christmas is just around the corner! While in other countries, people are going crazy about ginger bread or any types of sweets that can spice up their bodies during the cold season, here in the country down-under, we only crave for something cold, light and refreshing! If you are looking for some ideas for Christmas baking for your holidays, this No-bake Berries Cheesecake might be a good choice ;)


Ingredients (18cm cake pan)

Cookie base:

125g cookies

50g melted butter


Cream cheese layer:

125g cream cheese

200g heavy cream

7g gelatine

45g icing sugar

Lemon juice from half a lemon

2tbsp warm water


Berries jelly:

A handful of frozen berries

2tbsp of sugar (or adjusting to your taste)

20 ml water

7g gelatine

2tbsp of warm water


Making

Cooking base:

- Crush the cookies finely (or use a food mixer to blend them all). Add melted butter to the crushed cookie and mix well until they all stick together. Transfer the cookie mixture into the cake pan and use a spoon to press it down until it forms a hard base. Put the cake pan into the fridge.

Cream cheese layer:

- Soak gelatine in warm water and wait for about 5 mins.

- Meanwhile, Mix cream cheese with icing sugar (using a hand mixer if the cream cheese is still hard) and use a whisk if the cream cheese is already soft). Add lemon juice. Add gelatine.

- Whisk heavy cream (using hand mixer will be much quicker) until it forms soft peak. Add the whipped cream to the cream cheese mixture and stir well until fully combined. Pour this mixture into the cake pan and leave in freezer.

Berries jelly:

- Soak gelatine in warm water and wait for about 5 mins.

- Meanwhile, in a small pot, add frozen berries, water and sugar then boil on low heat until the berries are extremely soft. Use a spoon to crush the berries and turn off heat while the mixture is reduced (should look like berries sauce).

- Add gelatine and stir well. Let the mixture cool off completely.

- Check the cream cheese layer in the freezer, if it's hard then you can pour the the berries mixture on top. Leave in the freezer for about 1.5 hours or leave in the fridge for about 4-5 hours.

- Take the cake out of the fridge and remove the cake pan (using a spring form pan will be much easier to remove).
