Classic Orange Cake

Let's continue our Made with Orange series! This time is the jiggly fluffy Orange Cake. Having this reminds me the orange cake sold in most convenience stores around primary schools in Vietnam. Taste of childhood. And it is actually super easy and quick to make as well. So why not?
Ingredients
120 grams Plain Flour
1/2 teaspoon Salt
100 grams Fine Sugar
1.5 tablespoon Orange Zest
5 Large Egg (120 grams) 30 ml Oil
40 ml Fresh Orange Juice
Making
- Preheat the oven at 150C.
- Separate egg whites and egg yolks.
- In a mixing bowl, beat the egg whites with a hand-mixer while gradually add sugar into it. Beat until you see soft peak.
- Add egg yolks and use a whisk to gently mix everything together.
- Gently Add flour and salt and use a whisk or spatula to fold the mixture. Remember never overbeat the batter.
- Mix orange juice, oil and orange zest together. Then pour it into the batter. Use a spatula to mix the batter well.
- Transfer the batter into a 18cm tray. Shake the tray gently to even the surface of the batter.
- It's ready to go in the oven., 150C for 35mins.

For Orange Cake, I prefer to just dust the cake with powder sugar and garnish with more orange zest, just keep it classic. But you can do whatever you like, maybe decorate the cake with whipping cream, fresh fruits, orange curd or make an orange glaze layer on top. There are various versions for you to try.
